It's been a while since I posted. I have been busy doing lots of cooking classes at Airfield Estate - check out the website for up to date classes and also walking food tours with Delicious Dublin Food Tours.


Anyway I just got back from a wonderful five days Bord Bia Bloom doing many cookery demonstrations in the beautiful National Dairy Council show garden featuring delicious Irish dairy.


Over the five days I made a lot of custard!


Here's what I made:

  • Butter and Ricotta

  • Soda Bread, Cottage Cheese and Chutney

  • Turkish Eggs, Yoghurt flatbread & Labneh

  • Seafood Crumble; Milk Tart

  • Jambons & Rice Pudding

  • Chicken Empanadas & Portuguese Custard Tarts

  • Creamy Fennel Soup

  • Rhubarb Fool

  • Irish Rarebit (Welsh rarebit made even better with Guinness)

  • Lemon Posset

Blooming' Marvellous sounds like a lovely read. I liked how it highlights the simple pleasures that often get overlooked. If you enjoy pieces that break things down in a clear, practical way, you might also find this helpful: is bicarbonate of soda the same as baking soda. It explains the difference in a straightforward way and fits well with the theme of getting the basics right.
