To help with inspiration I've been doing a series of Lockdown Lunches from the Inspiration Kitchen at the beautiful Airfield Estate. Herby Drop Scones - makes 6 scones
180g self-raising flour
1 teaspoon baking powder
1 large egg, lightly beaten
75g (about 5 tablespoons) Parmesan or Cheddar, grated
15g (about 1 tablespoon) fresh herbs – parsley, rosemary or chives, roughly chopped
A few tablespoons of butter
Salt and pepper
Squash Hash – serves 6
700g butternut squash, pumpkin or sweet potato, peeled and cubed into 2cm pieces
1 tablespoon butter
2 tablespoons olive oil
A few sprigs of rosemary or thyme
