Lockdown Lunches

To help with inspiration I've been doing a series of Lockdown Lunches from the Inspiration Kitchen at the beautiful Airfield Estate. Every Wednesday at 12.30pm through Zoom or Facebook Live I'm cooking a quick, healthy-ish lunch. Hope you can join me! Will be doing them every week up to early March.

Herby Drop Scones - makes 6 scones⁠

Ingredients⁠

180g self-raising flour⁠

1 teaspoon baking powder⁠

1 large egg, lightly beaten⁠

220ml milk⁠

75g (about 5 tablespoons) Parmesan or Cheddar, grated⁠

15g (about 1 tablespoon) fresh herbs – parsley, rosemary or chives, roughly chopped⁠

A few tablespoons of butter⁠

Salt and pepper⁠

Squash Hash – serves 6⁠

Ingredients⁠

700g butternut squash, pumpkin or sweet potato, peeled and cubed into 2cm pieces⁠

2 onions⁠

1 tablespoon butter⁠

2 tablespoons olive oil⁠

A few sprigs of rosemary or thyme⁠
